Shrimp tocos with corn tortillas and Jim’s feliz salsa


Well, I got lucky on this one. No doubt one of the best things I have ever made! An inexpensive easy dish to make that will make any dinner party a REAL FUN FEAST. Summer is the perfect time for this amazing delicious and healthy dish. You can also substitute the Shrimp with spicy grilled chicken or flank steak. A variety of seafood including Tuna, Red fish, and Flounder or even Scallops would work perfect as well. For the most part, folks can easily find good shrimp so that is what we did here today. Here is what you will need.
 










"What, no lime?"

Food processor
Tortilla press and cast iron skillet well seasoned.
Maseca corn flour
Large peeled and de veined shrimp
Fresh Queso Fresco Cheese
Fresh table cream (Mexican soft sour cream)
1\2 tablespoon of cumin
1\2 tablespoon of garlic powder
10 crushed garlic cloves
Two scallions
1 diced shallot
1\2 teaspoon of pepper
1\2 teaspoon cayenne pepper
1 seeded jalapeno (fresh)
1 teaspoon of course ground sea salt
1\2 tablespoon of chili powder
4 limes
1 bunch of cilantro
1 bunch of Italian parsley
Fresh lettuce
4 ripe tomatoes
1 tablespoon apple cider vinegar
Four avocado’s


Feliz Salsa
First up, make  my Feliz salsa or “Happy” salsa. In the food processor add the cumin, garlic powder and cloves, spring onion, shallots, pepper (black and cayenne), jalapeno, one cup cilantro and Italian parsley, vinegar, salt, juice of two limes, and chili powder then blend. Once blended well it will look like a green pasty mush I call “delicioso”, and that is what you want.

Next in a LARGE bowl place two diced tomatoes, four avocados diced, coarsely chopped cilantro (1\2 cup) then add your “delicioso” into the bowl and stir all ingredients. Next, cover tightly with saran wrap and put in the refrigerator. You have now made my Feliz Salsa! (and it is to die for, put it on a brick and it would taste good)

Next, peel and devein your shrimp and either grill or sear in cast iron skillet. Season with just a little garlic and chili powder to your liking. Set shrimp aside on warm.
Shrimp
 Make FRESH tortillas, don’t skip this step! Use your favorite corn flour (I use Maseca, I have found a lot of Mexican restaurants use this, at least the ones I frequent and it is simple and very good) Once tortillas are made sear them off in the skillet and place in a tortilla warming tray.
Press then immediately place in hot cast iron.
 
SIMPLE! Just add water and pinch of sea salt.
 "Es Facil!"
 
To serve!
 

Simply place three to four shrimp in a tortilla, then add as much feliz salsa as you like, then garnish with a little fresh lettuce, some Queso Fresco cheese, then topped with a few diced tomatoes and table cream. Slice two limes and serve on the side.(table cream is a soft Mexican sour cream you can find at most Mexican grocers)


TIP: Put Crema in squirt container then garnish

Defiantly try this recipe, in my 45 years of cooking, it is at the very top of the list. This dinner was made for my wife Donna “Ms 11” birthday. I served it with a side of her favorite, Eastern Shore Steamed Clams.

No Knead Bread anywhere, anytime, anyplace. The best "to go" bread recipe

Right now I am traveling and have landed in Cedar Key Florida. I brought along with the two cats, Donna, and a ton of production gear, and of all things my starter. I figured I would try some bread recipes while on location for a while.


This no knead recipe is one that requires no special tools, flour, or yeast. The dutch oven that is so often used for baking this bread, is no where to be found. So I improvised. I found a cooking pot and aluminum foil and away I went.

You will need one pack of yeast, four cups of flour, and for this recipe I used one cup of proofed starter and a little over a cup of water. Through in three tabelspoons of extra Virgin olive oil and a teaspoon of sea salt. Mix everything up and fold on a flour surface into a ball.
 
Now do this in the morning so the dough can rise all day, at night place the dough covered in the fridge. In the morning punch down and let sit out all day to rise again. Bake in the afternoon.

Pre heat oven to 450 with the pot inside the oven. Be sure to use heavy duty pot holders so you won’t burn yourself. I also place a steam tray in the oven, it is just a pan with water in it. This keeps the oven humid and will help crust up the bread towards the end of baking.
Rise in a warm place
Use a steam bath,  tray with water in it.
 
Use foil for a lid. "Fake Dutch Oven"
Once oven is at temp, take out the pot and place the dough inside. I rubbed a little olive oil on the top of the dough then scored it twice, covered with foil, then placed in oven.

After thirty minutes, take off foil and bake another 15 minutes, then your done.

This is so simple and makes delicious bread. If you don’t have a sour dough starter I suggest starting one. I use mine every time I bake, the flavor is fantastic.


So when traveling you don’t need to take the pantry, just pick up some cheap flour, water, salt, yeast and a little olive oil and you are set to have some of the best bred in the world. It is hard to mess this recipe up!!

Lobster birthday dinner for two recipe.


As recipe’s go I don’t think this one could be any more simple. We love Lobster however it is not something we can afford to do on a regular basis. Lobster is not native to our area so there is no going down to the docks and buying them off the boats.

A lot of people here in the Mid-Atlantic will put different spices in the boil and that is what I was going to do with this dish. Before cooking for Donnas’ birthday I called a friend of mine who lives in Maine and ask him what do the locals do up there. He said simply steam or boil in water with sea salt. That is it. If cooking potatoes, place them in first because they will take longer to cook. For these size Lobsters I only needed to steam them for around 25 minutes.


One thing that I did do was to add one cup of white wine into the sea salt and water mix. The Lobsters went in first, then during the last eight minutes of cooking I added the clams, shrimp, and corn.

This was served up with a garlic butter and white wine reduction.


The best advice I can give for cooking Lobster is do not mess it up by adding a ton of spices like Old Bay. The meat is so good, it really does not need anything else. Other tips, buy hard shell Lobsters you will find they have more meat in them. Some say the soft shell is sweeter meat but my friends of Maine say no, go for the hard shell.


You can put what you like in the boil, our fav was simply Lobster with 50 clams, corn and shrimp. Whatever you like and can get fresh. If I had a crayfish supplier I would throw them in the mix as well.

Purchasing Lobsters may be your biggest challenge. They are pricey and for good reason. I was still a member of a restaurant supply company from back when I had my BBQ smoke house, I got these crustations from them at wholesale. If you shop the discount clubs you probably can find a deal on some frozen tails.


Lastly one of the great things about cooking this boil is the leftover stock. Use it for making seafood soups and you will thank me!!

Quack Quack!!! Duck Egg Sandwich....the real Dynasty!!





Duckage Breakfast Sandwich



This one is a great breakfast dish that will keep you going all day! Absolutely delicious. 




You will need:

*One Duck Egg
*One Whole Wheat English Muffin
*Fresh Basil
*Fresh country sausage
*Extra Sharp Cheddar Cheese
*Horseradish and Mayo sauce.
*One pad butter
*Sea Salt, Pepper and garlic powder
My Duck eggs that I got from a local farmer.


First up brown up your English muffin texas toast style. Place a little pad of butter on each half of the muffin and sprinkle a little pepper, garlic powder and sea salt on the muffin. Then place in well oiled and medium heat cast iron skillet. Brown muffin then flip and cook an additional two minutes. Flip back over and place thinly sliced cheese on the muffin then set aside.

Add horseradish sauce to muffin top
Next cook your sausage patty in the skillet, brown very well, drain and set on top of muffin half.

Mostly drain your pan and while still hot add on Duck egg. Cook over easy then place on top of sausage.

Complete by adding some basil and horseradish sauce to the top of muffin half.

DELICIOUS!!!!! Below are some great facts about fresh Duck eggs, cant beat um!! (Actually you can, use a fork).

Duck eggs reportedly also have more Vitamin K2, Duck eggs also are higher in calories for the same weight quantity, probably due to it's slightly higher fat concentration. Also, keep in mind that the eggs of free-range, pastured animals generally have higher levels of vitamins and higher levels of omega-3 fatty acids. The yolks are darker, yellower, indicating a higher nutrient density.
