Clams Ala Jim (Bouillabaisse pasta)


Here is one of our favorite Coastal Couples recipes. Talk about cheap and easy!! No…. Not me, this dish! Gourmet dining on a budget. This dinner comes out to be around only 3 bucks per serving and the leftovers are fantastic!! Here is what you will need:

Fresh middle neck clams
One spring onion
Once and plum tomatoes
1 teaspoon Garlic powder
1 teaspoon Onion powder
Heavy dash White pepper
½ cup white wine
¼ cup Dried or fresh basil
Teaspoon oregano
2 teaspoons Sea salt
½ stick butter
Two cans baby clams
One box ww spaghetti noodles
Parm cheese dried.


First wash your clams, as many as you like in you pasta and set aside. Open the can of tomatoes and hand crush them set aside in a bowl.

In a skillet add the butter then melt. Add chopped spring onion, garlic and wine. Cook until the onion is tender. Next add all canned clams and seasonings.

Simmer for five minutes then add crushed tomatoes. Once almost to a boil then add clams and cook for five minutes then reduce heat to low simmer.

Sprinkle parm cheese in and stir, cover and let simmer for 15 minutes.

Plate up some pre cooked pasta and pour sauce and clams on top. Garnish with Parm cheese and fresh parsley.

Awesome dish, totally fantastic!!

Quack Quack!!! Duck Egg Sandwich....the real Dynasty!!





Duckage Breakfast Sandwich



This one is a great breakfast dish that will keep you going all day! Absolutely delicious. 




You will need:

*One Duck Egg
*One Whole Wheat English Muffin
*Fresh Basil
*Fresh country sausage
*Extra Sharp Cheddar Cheese
*Horseradish and Mayo sauce.
*One pad butter
*Sea Salt, Pepper and garlic powder
My Duck eggs that I got from a local farmer.


First up brown up your English muffin texas toast style. Place a little pad of butter on each half of the muffin and sprinkle a little pepper, garlic powder and sea salt on the muffin. Then place in well oiled and medium heat cast iron skillet. Brown muffin then flip and cook an additional two minutes. Flip back over and place thinly sliced cheese on the muffin then set aside.

Add horseradish sauce to muffin top
Next cook your sausage patty in the skillet, brown very well, drain and set on top of muffin half.

Mostly drain your pan and while still hot add on Duck egg. Cook over easy then place on top of sausage.

Complete by adding some basil and horseradish sauce to the top of muffin half.

DELICIOUS!!!!! Below are some great facts about fresh Duck eggs, cant beat um!! (Actually you can, use a fork).

Duck eggs reportedly also have more Vitamin K2, Duck eggs also are higher in calories for the same weight quantity, probably due to it's slightly higher fat concentration. Also, keep in mind that the eggs of free-range, pastured animals generally have higher levels of vitamins and higher levels of omega-3 fatty acids. The yolks are darker, yellower, indicating a higher nutrient density.

Coastal Carne Asada

WOW one of my all time favorite recipes. One that we put a new twist on and boy it is as delicious as it is fun. A great dish for couples who are in the mood for doing some entertaining.

Now when you prepare this dish, be sure to set your smart phones on some streaming Latin jazz music to be playing in the kitchen, because you want all the right ambiance when making this incredible dish.


First up, what makes this carne asada coastal? The twist is you make a shrimp ceviche and have it chilled in the fridge and is served as a garnish for the asada. Here is how you make the ceviche.

Shrimp Ceviche
Camarón es genial con este plato

1\2 pound peeled and de veined shrimp. Wash well then butterfly the shrimp. Place in a bowl and add small sliced and cubed red onion, avocado, and garlic. The juice of two limes and one lemon go into the mix along with sea salt and fresh cracked pepper to taste. Then add two teaspoons fresh chopped cilantro, stir and place in the fridge for four to five hours.

Three cans of san marzano plum tomatoes crushed by hand and place tomato and juice in a large bowl. Add one half cup fresh chopped parsley and two full cups of chopped cilantro. Four cloves chopped garlic teaspoon of fresh cracked pepper, three teaspoons sea salt, one teaspoon crushed red pepper, juice of four limes, 3 teaspoons of soy oil, two teaspoons of red wine vinegar, one cp of water. Mix all in a large bowl and allow to sit at room temp for at least 20 minutes.

This my friends is a rub that I have expanded on slightly. The original rub recipe came from my favorite Mexican diners and markets of all time located in Oceanview VA.


In a bowl combine 1\2 cup of cumin, black pepper and garlic powder. The add three tablespoons of sea salt, lime powder, and chili powder and then a dash of oregano. Mix well and keep in rub jar.

Chips/Chalupas/Tortillas

For this dinner I made home made chips in the cast iron skillet. I bought some yellow corn tortillas cut into quarters and pan fried until golden brown on each side. Then also fried some whole for chalupas. Home frying your chips makes a HUGE difference.


Preparation of steak.
Sólo use falda steak

Do NOT use any other steak other than skirt. You will have decent results with other cuts of meat but if you want the real enchilada so to speak, get skirt. It is not cheap around where I live and not that easy to find.


Rub the steak down with the juice of four limes then coat the meat with the rub and set in fridge overnight. I curl my skirts up after marinade and place them in a tin pan for the overnight rest.



The next day bring the steak out to room temp before cooking. Get your cast iron skillet ready and pre heat it. Then crank skillet up to medium high heat and begin to sear your skirt steak. Cook both sides with a nice cast iron sear and cook until medium rare then get ready to serve.



Sides include salsa, lettuce, spinach, sliced avocado, shrimp civache, chips, limes, tortillas, fresh shredded extra sharp cheddar and monteray jack cheese, and slow cooked re fried beans with cheese.

Serve all sides on large table and the carne asada is served out of the cast iron skillet on a hot plate.

This truly is an awesome delicious dish that is really fun to make. A great meal for entertaining!!!

Clam Fritters pan seared in cast iron skillet

“Hey Cherry, you up?”



“Yeah Chowder, been straining all morning. Siphoned up some good grub on the tide change.”
“Your always a foot ahead of me, and you are so pretty Cherry, I really dig ya. Looks like another nice day, very sandy out”.

“Oh no!!!! Chowder..... here comes that rake again, HURRY!!  Dig, Dig, Dig!!!!”

“Oh Cherry my dahlin, looks like they got us this time! They really raked up. I wonder where we will end up”.

“I don’t know, Charlie Tuna told us we could be abducted by those humanoids if we did not bury deep enough, we should of listened!”
“Seems like we have stopped moving around, Say Chowder why don’t you take a peak outside and see where we are.”

“Anything for you Cherry.”
 
“Well, it's dark, but all I see is Darnell's Aunt on a pancake box. Aunt Jasmine?. I don't know........ but I think we are safe.”

“Wait!!!! Oh NOOOOOO ! I see that big black round cast iron humanoid heating device Charlie Tuna warned us about!! I think we are gonna be FRIED Cherry!”

“WELL, Chowder, I think it’s about time we both came out of our shell!!”

Authentic Eastern Shore Clam Fritter Recipe. FINALLY FOUND!!

Driving north on Rt 13 just of the Chesapeake Bay Bridge Tunnel is the entrance to clam nirvana. The Eastern Shore arguably grows the finest clams in the world and from my experience has proved to be true. Just last night we steamed up 100 with a little drawn butter mixed with white wine and garlic and it was one of the best dinners we ever had.


Since I was maybe 16 years old I have searched for the ultimate clam fritter recipe. I have searched the internet and found a lot of recipes all varying in ingredients and methods of cooking. My personal attempts at making an authentic clam fritter has failed miserably many times. While still tasty, nothing like the original you would find at seafood festivals or a good Eastern Shore seafood joint.


Traveling north I past Cape Charles and to the right I saw Randy and Sandy’s Seafood. There was a flashing “Open “ sign and a miniature lighthouse in the parking lot so I figured I 'd have to pop in.


I struck up a conversation with the owner and his son. Of course I picked up a bag of steamers and just could not get over this delicious smell that was emanating throughout the store. I asked him what was he cooking,

“Authentic clam fritters.” Well the first thing out f my mouth were words that were an attempt to get the recipe. I had just eaten lunch so I did not order one right then. We had a very nice chat then I asked to borrow a screwdriver, and went outside to put on my new license plates for my car I had just registered.

While I was putting on the plates in the parking lot, here comes the owner with a fritter for me to sample. What a nice fellow! Well although I was not hungry, I took a bite and WOW!!!!!! This is the fritter I had always dreamed of. So, I went back inside and thanked him again.


I just figured I had no chance in getting this recipe. We talked about different fritter recipes and how I grew up going to the Urbanna Oyster festival and always loved their fritters as well. The subject of our outdoor show came up and that I really would love to have his recipe. So with a promise that I would post his business address and contact info on line, he gave me his recipe.

The thing is, I did not believe the recipe, it was just too simple!!! Here are the ingredients


Pancake Batter
Onion
Salt and pepper.




That’s it. Sounds simple but believe me you can screw this recipe up big time if you don’t follow EAXCTLY how to do it. Here we go.

First, use chowder clams only!!! If you don’t have Chowder clams, make another dish. The reason is the Chowder clam is large enough to have a nice surface area when chopped to hold together the pancake mix and the extra juice is also needed.


Thinly sliced raw onion. Not sautéed. Chop your onion and clams and place them in a bowl. Add the pancake mix until the mixture is the consistency of pancake batter. (salt and pepper to taste) use NO WATER!

Oil a cast iron skillet and cook the fritters much like you would a pancake.

These are the best I have ever had, ever. If you want a little heat to the mix just add a dash of cayenne pepper. This would make it sort of Cajun style.


My dahlin Donna’s favorite meal is clam fritters with mac and cheese and stewed tomatoes on the side.


I am off now to find some chowder clams and break out the cast iron skillet for tonight’s Saturday Night throw down!

Hi Folks!!
